Not-Thai Tangy Peanut Dressing and Chicken Lettuce Cups
I’m not fully sure how this dressing became a thing. As much as I detest wanna be Thai food, I cannot say no to this dressing. Its both tangy and creamy. A little bit of peanut butter here goes a very long way making any salad you put this on more decadent without the gilt. Almond butter or Sun butter can also go in here, for those of you allergic to regular nuts. I imagined this became a cross between Thai satay sauce, Somtum dressing, and an adaptation of an american version of a vinaigrette. If Thai food is synonymous with something delicious, I suppose I am okay with that.
